2 oz Olive Oil Washed Gin
1 oz Dry Vermouth
2 Tomato Slices or Cherry Tomatoes

Olive Oil Washed Gin:
London Dry Gin (something classic)
Extra Virgin Olive Oil
1 Teaspoon Rosemary (ripped or crushed lightly)

For each cup of gin add 3 tablespoons of extra virgin olive oil and 1 teaspoon fresh rosemary. Combine all in a container that seals such as a mason jar. Let sit for about 24 hours while agitating or shaking it throughout. You may also put it in a hot water bath for some time but not necessary. After 24 hours, place the container in the freezer. After a few hours, the oil will be mostly solid and you can pour it through a coffee filter or a very fine mesh strainer. If some oil gets through you may have to repeat the freeze and strain process once more. The oil wash not only imparts some lovely flavor but gives the spirit a very rich and full body.

Muddle the tomato in a mixing glass. Add liquid over the tomato, give it some stirs and then add ice. Stir roughly 20 times. Double strain into a martini glass. Garnish with a castelvetrano olive or fresh mozzarella pearls.
